NS Maintenance mode is totaly customizable. You can go to Settings -> Maintenance mode and choose button and text color, text, footer copyright and so on. Customize email address isn't necessary because NS Maintenance mode send email subscription to Email address of site Admin.

Go to Subscribers on the left in your backend admin page and click on Export CSV.
